Abstract
Thymol is an effective antimicrobial and is to be encapsulated for use in liquid foods. Previously, novel thymol nanoemulsions have been prepared with the emulsifier combination of gelatin-A (acid-hydrolyzed) or -B (base-hydrolyzed) and lecithin.
