Antioxidant, quenching, electrophoretic, antifungal and structural properties of proteins and their abilities to control the quality of Amaranthus industrial products

The present study showed the bioactive properties such as antioxidant, quenching, structural and antifungal in six Amaranthus (A.) hypochondriacus laboratory and industrial products.
