Abstract
Cilj ovog rada bio je istražiti mikrobioloske promjene u trajnim kobasicama od konjskog mesa prema fazama zrenja i sezoni proizvodnje, determinirati bakterije mlijecne kiseline i ispitati njihov inhibicijski potencijal prema bakteriji Listeria monocytogenes.
