Abstract
Glucomannan properties require to be adjusted to fulfill broader aplications. To adjust the properties, some modifications are conducted including hydrolysis using acid. This study aimed to evaluate the effect of glucomannan hydrolysis using citric acid on its antioxidant and physicochemical properties.
