Abstract
This work studies the interactions, thermodynamics, phase behaviour, and rheology of mucin/gelatin binary mixtures. Addition of gelatin in mucin solutions at pH 7 leads to aggregation and phase separation, while such phenomena are not observed at lower pH values.
