This study investigates the efficiency of starch nano-particles in comparison with native starch for encapsulation of probiotic bacterial cells (Pediococcus acidolactici). Bacterial cell-death after encapsulation, viability and bioactivity retention under simulated gastro-intestinal conditions (SGID) were studied.
