In this study, we aim to reveal the properties of different fractions of soy hull soluble polysaccharide (SHSP) derived by alcohol precipitation and the related mechanism. Three fractions were obtained, designated as SHSP20, SHSP40 and SHSP60; every fraction has its advantage(s).
