Abstract
Abstract Fabrication of stable aqueous foams is significant to various food and non-food applications. In the present study, we report aqueous foams with a volume maintained for 14 days after whipping suspensions with intercalated montmorillonite (MMT) platelets coated with sodium caseinate (NaCas). Intercalating MMT preheated at 60 °C for 1 h with room temperature NaCas solution resulted in a good extent of intercalated and exfoliated MMT platelets coated with NaCas. The high extent of MMT intercalation and exfoliation may have enabled the formation of relatively uniform and spherical bubbles, mechanically strong films, and a viscoelastic continuous phase, all of which may have helped to stabilize bubbles against various destabilization mechanisms. However, the insufficient MMT intercalation or excessive preheating causing re-aggregation of MMT platelets may have led to less than optimum structures and stabilities of foams. This study contributes to materials-based approaches to form aqueous foams with excellent kinetic stability valuable to various applications.

The aim of this study was to investigate the possibility of stabilising foam bubbles in water by adsorption of calcium carbonate (CaCO3) particles. Because CaCO3 is hydrophilic and not surface-active, particles were hydrophobised in situ with several emulsifiers. The used emulsifiers were food-grade and negatively charged at the pH employed. The effect of particle addition on foamability and foam stability of solutions containing either β-lactoglobulin, sodium caseinate, Quillaja, sodium dodecan...

Abstract The use of bio-nanocomposites for liberation of active substances is one of the popular alternatives for safely preserving food. In this context, the objective of this paper was to evaluate the interaction between montmorillonite sodium clay nanoparticles (MMT) and citric acid (CA) on whey protein isolate (WPI) bio-nanocomposites, developed by casting . CA was added to aid in the dispersion of MMT layers. The thermal analysis revealed that the addition of MMT, alone, increased the therm...

The effect of carbon nanostructures such as graphene (G), graphene oxide (GO) and nanodiamond (ND) on the spectral properties of Rhodamine 6G (Rd6G) emission due to the laser induced fluorescence (LIF) was investigated. It is shown that the addition of carbon nano- structures lead to sensible Red/Blue shifts which depend on the optical properties and surface functionality of nanoparticles. The current theories such as resonance energy transfer (RET), fluorescence quenching and photon propagation...

Abstract The focus in the study of Pickering foams and emulsions has recently been shifting from using inorganic particles to adopting particles of biological origin for stabilization. This shift is motivated by the incompatibility of some inorganic particles for food and biomedical applications, as well as their poor sustainability. This review focuses on major developments in foams and emulsions stabilized by particles of biological origin from the last 5 years. Recent reports in the literatur...

Abstract Fatty acids are anionic surfactants under their deprotonated forms. They are surfactants with both biodegrability and low toxicity. Fatty acid molecules can self-assemble under various shapes in an aqueous solution. These self-assembled structures can respond to stimuli such as pH, CO 2 and temperature due to changes occurring at the molecular level. These specificities make them surfactants of special interest to tune the properties at a macroscopic scale. The aim of this article is to...

Abstract To block rock pores in aphron drilling operation, colloidal gas aphrons (CGAs) stability is a key factor to minimize formation damage. Although the synergistic stabilization of aqueous foam by solid particles and surfactants has been extensively studied, there are few references for synergistic stabilization of CGAs. In this experimental study, stability of CGAs has been investigated in the presence of nanoparticles. CGAs dispersion were generated by stirring at 7000 rpm for 4 min in th...

The poor water solubility and bioactivity of lipophilic phytochemicals can be potentially improved by delivery systems. In this study, a low-cost, low-energy, and organic solvent-free encapsulation technology was studied by utilizing the pH-dependent solubility properties of curcumin and self-assembly properties of sodium caseinate (NaCas). Curcumin was deprotonated and dissolved, while NaCas was dissociated at pH 12 and 21 °C for 30 min. The subsequent neutralization enabled the encapsulation o...

Abstract Obtaining stable liquid foams is an important issue in view of their numerous applications. In some of these, the liquid foam in itself is of interest, in others, the liquid foam acts as a precursor for the generation of solid foam. In this short review, we will make a survey of the existing results in the area. This will include foams stabilised by surfactants, proteins and particles. The origin of the stability is related to the slowing down of coarsening, drainage or coalescence, and...

Abstract Pickering emulsions are attractive formulations because they are simple and bear strong similarities with the well-known surfactant-based emulsions. Pickering emulsions have been largely ignored since their early disclosure in 1907 and arouse a renewed interest quite recently. Since this unintelligible time gap raises suspicion, the first aim of the present review is giving the simple fundamental rules as an introduction for newcomers in the topic. The basic physical chemistry of Picker...
