Abstract
The present work aims to prepare and stabilize zein colloidal nanoparticles using soluble soybean polysaccharide (SSPS) as a stabilizer. A simple antisolvent precipitation method was used to fabricate the zein/SSPS composite nanoparticles at pH 4.0.
