Abstract
This chapter introduces the role of high-performance thin-layer chromatography (HPTLC) in the field of food analysis. HPTLC is well suited to food analysis as shown by many interesting examples analyzed with validated and standardized methods leading to results comparable to those obtained by other chromatographic techniques.
