Abstract
This work studied the dynamics of emulsions under a Phase Inversion Transition containing and not containing the liquid crystal phase. In the experimental routine, emulsions were subjected to cycles of heating and cooling in accordance with specified protocol, crossing the phase inversion temperature (PIT) twice at each experiment.
