The effects of 2-alkyl derivatives of 2-cyclopropene-1-carboxylic acid ethyl ester (CPE) with various lengths of alkyl side chains were examined on ethylene production and flesh softening of ‘Taishuu’ and ‘Fuyu’ persimmon (Diospyros kaki L.) fruit.
