Abstract
The effect of controlled pH and dissolved oxygen (DO) tension on the production of total glucosyltransferase activity (GTF), extracellular GTF and alternansucrase was studied in controlled batch fermentations of Leuconostoc mesenteroides NRRL B-1355.
