Abstract
Zein is a group of alcohol-soluble maize proteins and is typically dissolved in 70–80% aqueous ethanol before dispersion into water to precipitate zein as nanoparticles, which can simultaneously encapsulate various lipophilic compounds co-dissolved in aqueous ethanol.
