Abstract A novel ratiometric fluorescence sensor based on fluorescence resonance energy transfer (FRET) between MoS 2 QDs and AuNCs was developed for nitrite detection in sausages. The MoS 2 QDs-AuNCs nanocomposite exhibited dual emission peaks at 430 nm and 615 nm under 365 nm excitation. Abstract A colorimetric hydrogen sulfide (H2S) sensor based on gellan gum capped silver nanoparticles was developed to real-time monitor meat spoilage. The colorimetric sensor strategy was attributed to the ultrastrong binding ability of Ag with H2S to form Ag2S.
