The marketability of blueberries over long distances has been limited because of their highly perishability. To prolong the postharvest shelf life and conserve quality properties of blueberry, various alternatives have been evaluated. We studied the influence of gum arabic (GA) alone or GA enhanced with African baobab (AB) fruit extract on blueberry during cold storage (4 °C) for 21 days. Physico-chemical properties (e.g. pH, color, firmness, and weight loss), microbial decay, antioxidant proper...

Abstract The objectives of this research were to identify certain chemical compounds that may be used as fingerprints of Saudi honey and to evaluate their antioxidant and antibacterial activities. Eleven Saudi ‘monofloral’ honey samples were analyzed and evaluated. Non-phenolic compounds, such as 2,3-dihydro-3,5-dihydroxy-6-methyl-4H-pyran-4-one, methyl 3-hydroxyhexanaote and 5-hydroxymethyl-2-furancarboxaldehyde were present in different types of tested honey samples. Glyceraldehyde was only de...

Abstract Gum Arabic (GA) is a profitable natural wellspring of dissolvable dietary fiber that reaches 85% of its weight. It is described by its high molecular weight, low viscosity, and impartial tastes. GA contains over 80% fiber. Because of its low viscosity and its high solvency in water, it is difficult to supplement foodstuff like drinks, dairy items, candy, and meat products with high sums (up to 50%) of GA. Soluble dietary fibers help diminish the total cholesterol and the low-density lip...

Abstract Gastric ulcer is one of the disorders that affects a wide proportion of the population and exposes the patient to cancer if the mucosal congestion not treated properly. The pathogenesis of gastric ulceration was explained by many scientists through different experimental animal models. The imbalance between the offensive elements and defensive mechanisms of the stomach play a major role in the incidence of gastric injury. Helicobacter pylori infection, nonsteroidal antiinflammatory drug...

Abstract Gum Arabic (GA)’s useful properties are firmly identified with its structure, which decides, for instance, solubility, viscosity, the level of association with water and oil in an emulsion, and microencapsulation capacity. Other than all the sensory and texturizing properties, GA has strong antioxidant properties, for example, an efficient capacity with regard to deactivation of energized electronic states and directed radical scavenging capacity. GA is an exceptionally successful emuls...

Abstract Seventy-two samples were collected from two groups of healthy volunteers, 10 females and 8 males, to investigate the effect of gum Arabic (GA) on the intestinal bacterial flora. The fecal bacterial mass (FBM) was measured as an index of the microbial population of the intestine by using the fractionation procedure because of its reliability. The net finding was that 80% of the female group and 75% of the male group showed increases in their FBM either at 2 days or 5 days of the treatmen...

The antioxidant properties of the water extract of Hibiscus sabdariffa L. as well as their aroma profile were investigated. The samples analyzed were three red (Al-Rahad, Al-Fashir, Al-Gezira) and one white varieties. Total phenolic content, total flavonoid content, total anthocyanin content, ferric reducing antioxidant power and radical scavenging activity (RSA %) were measured spectrophotometrically. The red varieties of Karkade showed better overall antioxidant properties and aroma profile co...
